Start with the ceviche mixto (sea bass and shrimp cured in leche de tigre with red onion, sweet potato, and corn) — this is the dish to test any Peruvian kitchen on, and Así Es Mi Peru passes confidently. Lomo saltado (stir-fried beef with onions, tomatoes, soy sauce, and french fries served over rice) is the second must-order. Other standouts: ají de gallina (creamy chicken in yellow chili sauce), arroz chaufa (Chinese-Peruvian fried rice), causa rellena (cold mashed potato terrine with fillings), and chicha morada (purple corn drink). The pisco sour is properly made with egg white foam.
