Why Carte Blanche is the most-talked-about restaurant in Aruba

When Chef Dennis opened Carte Blanche in September 2010, the chef’s-table tasting menu format was new to Aruba. He pioneered it on the island. Since then he’s built a small empire on Wilhelminastraat — Carte Blanche, sister restaurants Wilhelmina (à la carte) and Maroc Restaurant & Tapas all share the same building. Dennis went to culinary school in Holland and trained in Michelin-starred European restaurants before bringing his vision to Aruba.

The format is unique: 14 guests gather at a curved black granite bar facing Dennis’s open kitchen. He cooks every course in front of you — six-burner gas stove, refrigerator-turned-oven on top, wine cooler below. Glen pairs wines and keeps the conversation going. The whole evening runs three to four hours, from 6:30 PM until 10:30–11:00 PM. You’ll meet the strangers seated next to you. By the end of the night you’ll know their names.

You don’t see the menu in advance. That’s the entire concept — “Carte Blanche” gives the chef full creative control. Past courses guests rave about include:

  • Famous Grouper Ceviche — Dennis’s signature amuse-bouche, repeatedly called “perfection” in reviews.
  • Beefsteak Tomato — confusingly named octopus dish, a recent menu favorite.
  • Pumpkin Tortellini — homemade pasta, seasonal preparation.
  • Caribbean Rock Lobster with spaghetti — frequently mentioned as standout.
  • Veal Cheek — described as “absolutely phenomenal” by guests.
  • Sea Bass on mushrooms and asparagus with mushroom ravioli — restaurant-of-the-world quality.

The menu changes nearly every night. Wine pairings (optional, additional cost) come from Glen’s extensive cellar — he’s trained in Switzerland and speaks five languages.

Repeat-customer reviews are the strongest signal — many guests come back annually for years. Common themes: Chef Dennis’s creativity rivals Michelin-starred restaurants, Glen’s wine pairings are consistently excellent, the warm camaraderie between hosts and guests, and the unhurried 3+ hour pace that lets you actually savor each course. Reviewers often name specific staff: Glen, Milly, Juliette, Kenn, Sandra.

A few caveats: wine prices aren’t always disclosed upfront — ask before ordering if budget matters; the bar layout makes it harder to converse with guests across the room (you mainly chat with neighbors); and vegetarians need to look elsewhere — try Wilhelmina next door instead.

How to get there

Carte Blanche is on Wilhelminastraat 74 in downtown Oranjestad, walking distance from the cruise port and main downtown area. From Palm Beach high-rises it’s a 15-minute taxi ($15–20). Oranjestad has plenty of paid parking nearby. Note: Carte Blanche moved from Bucuti Beach Resort (Eagle Beach) to its current downtown location in January 2018.
