Chef Patrick trained at Michelin-starred restaurants in Europe before bringing those techniques to Aruba. The tasting menu changes based on what’s available — Caribbean fish caught that morning, locally grown herbs and vegetables, imported European specialties when they add something the island can’t provide.

The cooking style combines French technique with Caribbean ingredients and Dutch influences — a combination that only makes sense in Aruba, where all three cultures have shaped the island’s history. Each course is a considered statement. The wine pairing, if you opt for it, is chosen personally by the chef.

The restaurant sits adjacent to Aruba’s famous De Olde Molen (The Old Mill), a 200-year-old Dutch windmill that was dismantled and shipped from Holland to Aruba in 1960.
