The tasting menu runs 8 courses and changes monthly — no two visits are ever the same. Caribbean ingredients meet Peruvian influences, avant-garde French techniques, and the kind of molecular touches that add surprise without undermining the substance of the food. The menu changes to reflect what’s freshest and what the chef is most excited about.
